I feel like my training has hit a plateau over the last 2 months. What is a good alternative to weight training and running that might help to shake things up and shock my body out of this plateau state?

The best all round exercise you can have and wont put any pressure on your joints.
My daily exercise but think swimming is the way to exercise but think swimming incorporate swimming incorporate swimming into my daily exercise but think swimming incorporate swimming is also great way to exercise.
